Inches, not quarts
A 30-inch fish does not care that the cooler is 65 quarts; it cares that the interior is 26 inches long. So this page sorts on interior length first: RTIC 65 at 26 in, Engel 65 at 23.5, Tundra 65 at 23.1, Pelican 45QW at 18.1, Engel 50 at 18, and the Igloo Polar 120 at 33–34.7 inches for the day you need a fish box and not a cooler. The second spec is height from the deck, because a cooler on a boat is a seat: Engel's 50 is 18.25 in tall, its 65 is 16.5, and Engel sells a cushion for both.

On the deck
Fish and ice share a cooler badly: a fish is 60°F of meat, and every one you add is a bag of warmth. The trick is a slurry, half ice and half water, which pulls heat out of a fish faster than dry ice does and keeps it from freezer-burning. A cooler with a good drain (Pelican's hose thread, RTIC's threaded plug) matters more on a boat than anywhere, because you dump and refill the slurry. Drain plug replacement is the repair every boat cooler eventually needs, and RTIC and Engel sell the plug.
On warranty: the boat is salt, sun and vibration, which is the abuse every term excludes and the defect every term covers. Engel's 10 years and Pelican's lifetime are the reason those two top this page over the RTIC 65's longer interior and better measured ice. Choosing an ice chest for a boat
A boat asks for four things a campsite never does, and they are worth separating from the fish-length question above. It wants seat height, because the cooler is furniture: 16 to 18 inches puts the lid at a usable perch, which is why Engel's 50 (18.25 in) and 65 (16.5 in) sell cushions. It wants non-marking, non-skid feet, so the cooler stays put on a wet deck without leaving black streaks on gel coat. It wants tie-down points, because an unsecured 60 lb chest in a following sea is a hazard. And it wants a threaded drain, so a hose empties the slurry over the gunwale instead of into the bilge.
That last group is exactly what makes a cheap purpose-built marine cooler worth more on a boat than a generic budget chest. Igloo's Marine Ultra 70 lists a stainless hinge pin and rust-resistant screws, UV inhibitors in the shell, a threaded drain plug, four self-draining cup holders and a molded-in fish ruler, at $94.99 and 13.4 lb — and OutdoorGearLab measured it at 4.2 days below 40°F. Igloo covers it for one year, which is the trade; the whole sub-$100 field is ranked here. Spend more and Pelican and Engel give you the same hardware with a lifetime and a 10-year term.
Size it to the boat rather than the catch if the two disagree. A center console with limited deck space takes a 45 to 50 quart chest that fits under the leaning post; a larger bay boat can carry a 65 to 70 quart box as a seat. Measure the hatch, the console gap and the seat base before ordering, and remember that salt makes rinsing every latch, hinge and thread after each trip the difference between a ten-year cooler and a three-year one.

Measure the biggest fish you keep
Then buy an interior two inches longer. A 65 from RTIC is 26 in; from Engel and YETI, 23 in. Above that, the Polar 120.
Slurry, not ice
Half ice, half water. A fish cools faster in water than in air, and a slurry never freezer-burns.
Buy the plug and the gasket now
Salt strips drain-plug threads and dries gaskets. Engel's plugs are $9.99; RTIC sells gaskets by size. Keep a spare of each in the boat. The swap.
Rinse it every trip
Fresh water on every hinge, latch and thread. It is the difference between a 10-year cooler and a 3-year one.
